Den som finns d\u00e4ri <em>bacillus subtilis<\/em> (\u00e4ven kallad h\u00f6bacill; grampositiv, v\u00e4xer anaerobt) orsakar j\u00e4sning av de kokta sojab\u00f6norna, vilket resulterar i produktion av bland annat nattokinas.<\/p>\n\n\n\n<p>Under j\u00e4sningen produceras cirka 124 g\u00e5nger m\u00e4ngden <em>Vitamin K2<\/em>, ytterligare vitaminer fr\u00e5n <em>Vitamin B-komplex<\/em>, det fibrinolytiska och amylolytiska enzymet som h\u00f6r till serinproteaserna <em>Nattokinas<\/em>, antibakteriell mot Escherichia coli och Helicobacter pylori <em>Dipicolinsyra<\/em>polysackariden <em>Levan<\/em> och <em>ammoniak<\/em>, vars inneh\u00e5ll inte b\u00f6r vara st\u00f6rre \u00e4n 0,2 % av smaksk\u00e4l.
