Celui qu&#039;il contient <em>bacille subtilis<\/em> (\u00e9galement appel\u00e9 bacille du foin ; Gram positif, \u00e0 croissance ana\u00e9robie) provoque la fermentation du soja cuit, entra\u00eenant entre autres la production de nattokinase.<\/p>\n\n\n\n<p>Pendant la fermentation, environ 124 fois la quantit\u00e9 est produite <em>Vitamine K2<\/em>, d&#039;autres vitamines du <em>Complexe de vitamines B<\/em>, l&#039;enzyme fibrinolytique et amylolytique appartenant aux s\u00e9rine prot\u00e9ases <em>Nattokinase<\/em>, antibact\u00e9rien contre Escherichia coli et Helicobacter pylori <em>Acide dipicolinique<\/em>, le polysaccharide <em>L\u00e9van<\/em> et <em>ammoniac<\/em>, dont la teneur ne doit pas \u00eatre sup\u00e9rieure \u00e0 0,2 % pour des raisons de go\u00fbt.
